Sautéed bok choy, onions, and cashews
Ingredients:
- 1-2 tablespoon of virgin olive oil
- 5-6 bunches of baby bok choy, cleaned, with the ends trimmed
- A handful of cashews
- Dried basil leaves
- 1 teaspoon of Tumeric powder
- 1/2 teaspoon of Himalayan salt
- Crushed pepper
- 1/2 an onion
Instructions:
- Heat olive oil to medium heat in a skillet or pan
- Add bok choy and cook for 4-5 minutes until leaves are wilted and soft
- Add onions and cook for another 2-3 minutes until onions are soft
- Combine dish with cashews and mix everything together for an additional 2-3 minutes
- Add tumeric powder which will turn the onions slightly yellow as well as dried basil leaves to enhance aroma of dish
- Season to taste with himalayan salt and black crushed pepper
