Sautéed bok choy, onions, and cashews

Ingredients: 

  • 1-2 tablespoon of virgin olive oil
  • 5-6 bunches of baby bok choy, cleaned, with the ends trimmed
  • A handful of cashews
  • Dried basil leaves
  • 1 teaspoon of Tumeric powder
  • 1/2 teaspoon of Himalayan salt 
  • Crushed pepper 
  • 1/2 an onion 

Instructions: 

  • Heat olive oil to medium heat in a skillet or pan 
  • Add bok choy and cook for 4-5 minutes until leaves are wilted and soft 
  • Add onions and cook for another 2-3 minutes until onions are soft 
  • Combine dish with cashews and mix everything together for an additional 2-3 minutes 
  • Add tumeric powder which will turn the onions slightly yellow as well as dried basil leaves to enhance aroma of dish 
  • Season to taste with himalayan salt and black crushed pepper
