Stir-Fried Bell Peppers, Onions, and Mushrooms

INGREDIENTS:

  • 2-3 bell peppers
  • A box of mushrooms 
  • 1/2 an onion 
  • Salt, pepper 
  • Olive oil
  • A handful of almonds or cashews

INSTRUCTIONS:

  • Heat pan to medium heat, add olive oil 
  • Add bell peppers, stir for 2-3 minutes 
  • Add mushrooms and onions, continue stirring for an additional 2-3 minutes 
  • Add almonds or cashews 
  • Sprinkle with salt or pepper as needed
