Stir-Fried Bell Peppers, Onions, and Mushrooms
INGREDIENTS:
- 2-3 bell peppers
- A box of mushrooms
- 1/2 an onion
- Salt, pepper
- Olive oil
- A handful of almonds or cashews
INSTRUCTIONS:
- Heat pan to medium heat, add olive oil
- Add bell peppers, stir for 2-3 minutes
- Add mushrooms and onions, continue stirring for an additional 2-3 minutes
- Add almonds or cashews
- Sprinkle with salt or pepper as needed
